First, bring water in a pot to a boil, remove from heat and cover the pot with a lid.
Heat butter in another pot, add cubed beetroots along with chopped beetroot greens, onions, carrots, celerty and parsley root, parsnip, baby potatoes, green onions, nettles, orache, tender elder leaves, soaked dandelion leaves, bay leaves, peppercorns and allspice, chopped dill and parsley. Add 1 teaspon of salt, mix vegetables thoroughly and cook everything for 8-10 minutes.
Next, add the water you previously boiled, chopped shpinach and sorrel, meat preserves and add salt, if needed. Boil for a few minutes and remove from heat.
Crack one egg into a cup, add a pinch of salt and 2-3 tablespoons of broth from borscht and mix well. Pour the beaten egg into borscht, constantly stirring it.
Serve this amazing borscht with sour cream and sprinkle with fresh chopped dill and parsley.

- Water – 5 cups
- Baby beetroot – 4 oz
- Beetroot greens – 4 oz
- 4-5 baby potatoes
- 1 medium carrot
- 1/2 parsley root
- 1/2 celery root
- 1/4 parsnip
- 1 yellow onion
- 4 green onion stalks
- Sorrel – 8 oz
- Spinach – 8 oz
- Nettles – 3 oz
- Orache – 3 oz
- Tender elder leaves – 3 oz
- Dandelion leaves – 3 oz
- 1/2 cup chopped parsley
- 1/2 cup chopped dill
- Butter – 4 tablespoons
- Meat preserves – 1 can
- 2 eggs
- 4-5 peppercorns
- 4-5 allspice
- 2 bay leaves
- Salt – to taste
To serve:
- Sour cream
- Chopped dill
- Chopped parsley
Options:
- You can use mushroom broth for this borscht. In this case you will need to peel and thoroughly wash fresh white mushrooms (4 oz), place them in a pot and cover with 7 cups of water. Cook them for 40 minutes, strain the broth and keep it. Wash mushrooms again, cut them into strips and put them back into mushroom broth. Use this broth with mushrooms instead of water.
- If you have snow peas (4 oz) and green beans (4 oz), you can use put these into a pot along with all other vegetables.
- If you have mushrooms and are using water for this recipe, add washed and chopped mushrooms (4 oz) along with meat preserves.
- You can also add 2 tablespoons of tomato puree, if you wish. Add it to borscht along with spinach. In this case you should omit adding the beaten egg.
