Cut white bread or baguette into slices ½ inch thick. Toast them on one side in the pan with butter.
Chop onion nicely and fry on the skillet with butter until onion turns translucent. Add chopped mushrooms and cook on medium low heat for 5-7 minutes. Then add salt and ground black pepper.
Boil eggs for 10 minutes and transfer them into ice cold water to cool. Peel the eggs, wash them and cut into small cubes.
Grate cheese and mix it with cubed boiled eggs.
Heat the oven to 350 F. Place bread pieces on an oiled baking sheet toasted side up. Put roasted mushrooms on every piece and then add cheese and eggs mixture on top. Spread evenly. Place into preheated oven and bake until cheese melts. Serve mushroom toasts hot.
You will need:
- 1 white bread or baguette
- Boiled mushrooms – 4 oz
- Your favorite cheese – 8 oz
- 2 eggs
- 1 yellow onion
- Butter – 4 oz
- 1 pinch of ground black pepper
- 1 pinch of salt
Option:
You can add some breadcrumbs(1-2 tablespoons) to your onion-mushroom mixture. Then you will need to add 2 tablespoons of any broth of your choice when stewing the mushrooms and onions.
