Cut fresh cabbage into long strips or into squares. Place into a deep bowl. Add shredded carrots, bay leaves, whole allspice and mix well.

Mix water and salt together to create salt solution. Transfer your cabbage mix into a glass or ceramix jar or bowl and add your salt solution. Place the dish with cabbage into a dark and warm place. In 2-3 days press the cabbage down and pour the liquid out. This liquid is the kwas we need. If you want to continue fermenting your cabbage, just add 5% salt solution (5 grams of salt per 95 ml of water).

You will need:

  • Fresh green cabbage – 5 lb
  • 1 large carrot
  • 3 bay leaves
  • 5-6 peppercorns
  • Water – 4 1/2 cups
  • Salt – 2 tablespoons
